Title: Fruit Burritos

2cCottage cheese
1cSugar; divided
1/4tsCinnamon
2tsVanilla
6 Flour tortillas
1/2cStrawberry or apricot jam (opt.)
2cBite-size pieces fresh fruit (blueberries, peaches, banana

Line a cookie sheet with aluminum foil. Spray sheet with butter-flavored nonstick cooking spray, or brush with butter or oil. (Alternatively, burritos can be lightly sauteed in a hot nonstick skillet until tortillas are pliable).

Beat together cottage cheese, 1/2 cup sugar, cinnamon, and vanilla.

Place tortillas on a flat surface. Spread thin layer of jam on each tortilla. Place 1/3 cup cheese mixture in center of each tortilla. Sprinkle one-sixth of fruit on top of each tortilla. Bring bottom edge of each tortilla over filling. Fold each side of tortilla over filling, then fold top edge of tortilla over filling. Repeat will remaining 5 tortillas. Brush burritos with butter, and sprinkle remaining sugar over tops. Bake at 375! F 15 minutes or until burritos are light golden brown.
